Menu Option 1: Grilled Lemon Herb Chicken with Fresh Garden Salad
Appetizer: Caprese Skewers
Ingredients:
1 pint cherry tomatoes
1 package fresh mozzarella balls
Fresh basil leaves
Balsamic glaze
Instructions:
Thread cherry tomatoes, mozzarella balls, and basil leaves onto small skewers.
Drizzle with balsamic glaze before serving.
Main Course: Grilled Lemon Herb Chicken
Ingredients:
4 boneless, skinless chicken breasts
1/4 cup olive oil
Juice of 2 lemons
3 cloves garlic, minced
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
Salt and pepper to taste
Instructions:
In a bowl, mix olive oil, lemon juice, garlic, rosemary, thyme, salt, and pepper.
Add chicken breasts to the marinade, ensuring they are well-coated. Marinate for at least 30 minutes.
Preheat the grill to medium-high heat.
Grill chicken for 6-7 minutes on each side, or until fully cooked.
Let rest for a few minutes before serving & serve with a fresh garden salad

Ingredients:
2 ripe avocados, diced
1 ripe mango, diced
1/4 red onion, finely chopped
1/4 cup fresh cilantro, chopped
Juice of 2 limes
Salt and pepper to taste
Tortilla chips for serving
Instructions:
In a bowl, combine diced avocado, mango, red onion, and cilantro.
Add lime juice, salt, and pepper. Gently mix to combine.
Serve with tortilla chips.
Main Course: Shrimp Scampi with Linguine
Ingredients:
1 lb linguine
1 lb large shrimp, peeled and deveined
4 cloves garlic, minced
1/4 cup white wine
1/4 cup lemon juice
1/2 cup unsalted butter

Instructions:
Cook linguine according to package instructions. Drain and set aside.
